Pumpkin Roll

We make these pumpkin rolls to give away during the Christmas season.  They are an excellent and readily received present.  It is hard to dislike this delicious pumpkin roll recipe.  The ingredients you need are:

  • 3 eggs
  • 1 cup sugar
  • 2/3 cup pumpkin
  • 3/4 cup flour
  • 1 teaspoon baking soda
  • 2 teaspoon cinnamon

Preheat oven to 375°.

Beat eggs for 5 minutes.  Gradually add sugar while beating.  Fold in remaining ingredients.  Line a Jelly roll pan (15 1/2 x 10 1/2 x 1) with wax paper or foil.  Grease generously.  Spread batter in pan and sprinkle with pecans (if desired).  Bake for 15-20.  Next, invert the baked cake face down onto a towel generously sprinkled with powdered sugar.  Carefully remove wax paper/foil.  While hot, carefully roll cake in towel from narrow end and cool on wire rack.  When cool, remove towel and roll flat cake with mixture of the following:

  • 1 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 1 package of 8 oz. cream cheese
  • 4 tablespoons butter

After spreading icing on cake, roll the cake up like you did with the towel.  Refrigerate or freeze until set and slice as desired.
