Mexican Pie

You are certainly in for a treat when you make this dish!  Just don’t eat it too fast or you’ll be surprised at how fast it goes!  To make this scrumptious Mexican pie you will need:

  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 4 teaspoons chili powder
  • 2 teaspoons cumin
  • 1 teaspoon salt
  • 1 can red kidney beans, drained
  • 1/4 cup cilantro
  • 1 1/2 cups brown rice, cooked
  • 1 1/2 cups shredded cheddar
  • 3/4 cup milk
  • 2 beaten eggs

Preheat oven to 350º.

In a sauce pan cook onion and garlic in some olive oil.  Stir in chili powder, cumin, salt and cilantro, cooking one minute more.  Cool.  Stir in beans, rice, cheese, milk, and eggs.

Spray a pie plate with non-stick oil.  Put mixture into the pie plate.  Bake uncovered 25 minutes or until center is set.  Enjoy!

  1. I wonder if using ground beef instead of brown rice would work. Danny usually likes meat and I don’t see any in this recipe. I may try it sometime before the first of the year. I will let you know how it turns out with ground beef. I am not a big fan of rice anyway.
